You'll need to reach Town Restoration #2 before the blueprints for Beehives will become available from Rebecca's shop. You'll need 8 Small Lumber and 5 Honeycombs per Beehive. After you build and place them, you'll need to put in a Honey Bee. 6 days after, the Beehive will sparkle, indicating that your Honey is ready. The type of honey also depends on the type of bee you put in. Regular Honey Bees will usually produce regular Honey, Western Honey Bees (the purple ones you find in the mountains) will usually produce Flower Honey, and Mountain Honey Bees (found at the Ancient Ruins after you build the Travel Agency) will usually produce Royal Jelly. All three kinds of honey will count toward the Town Renovation #2 goal of shipping 10 Honeys. You cannot raise bees in the Winter, and the bees you keep in the hives will die once you reach the Winter season; nothing can be done about that.
